Want to make a poke bowl at home? This salmon poke bowl recipe is incredibly easy to make, and it is packed full of flavour and bright colours. I love making a poke bowl for lunch, you can even make ahead of time and take to work in your lunchbox. Here’s my poke bowl recipe:

What is a poke bowl?
These trendy bowls have become very popular over the last few years. Traditionally is sliced or cut raw fish and is one of the main dishes of Native Hawaiian cuisine. My version can be served with sushi-grade salmon, so it can be eaten raw, or smoked salmon if you prefer. (There are other alternatives below too.) This is served with sticky rice, crunchy carrots and cucumber, edamame beans, avocado and spicy mayo.
How healthy are poke bowls?
I think poke bowls are incredibly healthy, depending on what ingredients you use. They have an array of vegetables packed with vitamins, minerals and fibre. If you do eat meat and fish, this will give you the protein hit too.

Poke Bowl Ingredients
You can make your own poke bowls without raw fish. It can be challenging to find sushi-grade salmon, especially from your local supermarkets. It can also be expensive. My recipe uses smoked salmon instead. By buying smoked salmon trimmings, it’s, even more, cost-effective.
Poke Bowl Vegetarian / Vegan Ideas
You can replace the smoked salmon with cooked or grilled prawns, fresh or tinned tuna, cooked chicken. For a vegetarian or vegan poke bowl, you could also replace it with roast or chargrilled vegetables.
Which rice for the poke bowl?
I think sticky rice works best, so choose sushi rice or jasmine rice. However, any rice can be used, including brown, wild and white rice.
Poke Bowl Dressing
You can even have your poke bowl without soy sauce. Sweet chilli dipping sauce also goes well with it. You can also enjoy your poke bowl without avocado.

Eating avocados on Slimming World
There is a big myth that I would like to bust. You CAN eat avocado on Slimming World. It is 9.5 Syns per 100g – but this is an incredible amount of avocado. I purchase the small ones, which you can ripen at home. On average, when peeled and de-stoned, they come in at around 50g, which is 5 Syns. Perfect for adding to your poke bowl, or on toast with a poached or fried egg for breakfast.
