Carrot and Pineapple Muffins

Firstly, hands up! Who can’t wait to try my carrot and pineapple muffins? Muffins are terrifically easy to make, and nothing’s better than warm muffins from the oven. In addition, muffins are a great solution if you are looking for a quick, yummy bake.

I love baking! This carrot pineapple bran muffin recipe is one of those I have jotted down on a scrap of paper. I’m guessing I copied from a friend or a recipe book and have adapted it along the way. What you get is a super moist, lightly spiced, sweet pineapple and carrot flavoured treat that is great as an on-the-go breakfast, in a snack box, or dessert! Perfect with a cup of tea or coffee.

Want some more texture or sweetness? Add 50 grams of raisins or sultanas at the same time as the pineapple and organic sunflower seeds.

Ingredients
  

Shopping List
Dry ingredients
  • 140 grams self-raising flour
  • 85 grams wholemeal flour
  • 1/2 tsp bicarbonate of soda
  • 2 tsp mixed spice or ground cinnamon
  • 1 pinch salt
  • 100 grams caster sugar or golden caster sugar
Wet ingredients
  • 150 ml sunflower oil or vegetable oil
  • 1 egg or egg replacer if you want the recipe to be vegan
  • 2 tbsp pineapple juice
  • 200 grams carrots cooked and mashed (about 2 medium-sized carrots, no need to peel)
  • 1 tsp vanilla extract or flavouring
Other ingredients
  • 230 grams tin of pineapple chunks in juice (reserving 2 tbsp of juice for the wet ingredients)
  • 50 grams sunflower seeds
  • 1 tbsp porridge oats

Equipment

  • Hand whisk
  • Wooden spoon
  • 2 x mixing bowls
  • Kitchen weighing scales
  • Measuring spoons
  • 2 x silicone muffin moulds
  • Or silicone cake cases
  • Measuring jug

Method
 

  1. Preheat the oven to 200 degrees
  2. In a bowl, whisk the sugar and sunflower oil together
  3. Add the rest of the wet ingredients, and whisk
  4. Mix in the pineapple and sunflower seeds
  5. In another bowl, mix the dry ingredients together
  6. Fold the dry mixture into the wet one
  7. Spoon into 12 cupcake cases or silicone moulds 
  8. Sprinkle over the porridge oats
  9. Bake for 20-25 minutes

Alternative method

It’s not conventional, but you can use an all in one method to make these carrot and pineapple muffins. Add all of the ingredients – apart from the pineapple and sunflower seeds – and whisk. Then stir in the pineapple and seeds.

What is the difference between a muffin and a cake?

The difference between cakes and muffins is that a muffin is a form of bread. From a technical point of view, muffins are quick breads. The wet ingredients are combined in one bowl and the dry ingredients in another. Then the two are quickly incorporated together with minimal mixing to avoid gluten development. A cake is much sweeter than a muffin. Cakes usually have frosting, icing or decoration on them. Muffins are also traditionally served for breakfast.

I follow Slimming World*, and these carrot and pineapple muffins are definitely ideal for a healthy eating lifestyle. The whole recipe works out as 136.5 Syns. Making each muffin 11.5 Syns each, or 6 Syns if you want to make 24 cupcakes.
