Ad | Recently Schwartz, the worldwide retailer who produce herbs and seasonings got in touch with me. They set me the challenge of creating a midweek meal that is easy to do and full of flavour, using Schwartz Oregano.

As you may know, I think we should all be cooking from scratch daily, ditching all microwave and processed foods. It is so much easier and involves minimal effort to do this. My cupboards are full of seasonings, herbs and spices, helping me to make more inspiring dishes.
Schwartz is a brand we will all be familiar with, as they are the world’s largest producer of spices, seasonings and herbs. They are the undisputed masters when it comes to the flavourings industry. The handy little storage jars are packed full of flavour. Schwartz was established in 1889 and is focused on quality. The herbs and spices are sourced from 40 different countries, and they have intimate relationships with the farmers and communities they work with.
Oregano is not a herb I use very often, aside from the obvious – in a Spaghetti Bolognese. You can also use it to sprinkle on pizzas, on a Greek salad, on vegetables such as aubergines or courgettes before roasting, or stir into sauces.
This is a simple midweek meal, using Schwartz Oregano, takes moments to prepare and needs no technical effort to cook.

- Mix all of the ingredients together in a bowl. Add the chicken and cover with the mixture. Leave to marinate in the fridge, covered, for a minimum of 2 hours. If you can, leave overnight to infuse the flavours.
- Preheat the oven to 180 degrees.
- Brush a griddle pan or frying pan with oil and heat. Sear the chicken breast for a minute on each side and add to an oven dish.
- Pour over the excess sauce, and cover the oven dish with kitchen foil or an alternative (see tip below).
- Roast in the oven for 30-40 minutes (depending on the size of the chicken breast), or until the juices run clear.
- Serve with your favourite accompaniments, and drizzle the balsamic gravy over the top.

I had mine with handmade chips, roasted in the oven with Schwartz Chip Seasoning, and roasted red onion and peppers. I put these in the oven at the same time as the chicken.
Alternatives to Kitchen Foil
Unfortunately, kitchen foil or aluminium foil is not recyclable. You can now purchase roasting dishes with lids, which are an investment, but you will never have to use foil again. Or you can buy reusable baking sheets, which are wipeable. Other examples are leaf wraps, seaweed and banana leaves.

Where can you buy Schwartz?
It is well worth having a selection of Schwartz spices in your cupboard for when you need a little culinary inspiration. They are varied, affordable, easy to store and can really add some flavour to your cooking. I do my weekly shop at Tesco. I plan my weekly meals in advance and get all the fresh food and ingredients delivered. It stops me putting “rubbish” in my trolley, or being tempted by the “deals”, and it has helped me cut down on wastage.
